Chefs Trading's Market Report for December, 2018. Read on for information on what is expected in Costa Rica, Mexico, FIPs, Social Responsibility as well as Ecuador and our other initiatives.


Costa Rica

The Yellowfin Tuna and Swordfish Fishery Improvement Project in Costa Rica is alligned with the United Nations Developement Project and the National Platform in Costa Rica and is now known publicly as the Costa Rica Large Pelagic Longline FIP. Fishing is great in Costa Rica, we have lots of Mahi-Mahi!

Mahi-Mahi season is in full swing again this year.

Yellowfin Tuna pricing has been as volitile as the stock market lately and remains strong as supply comes and goes. We expect to see a continued increase in landings and hope to see signs of El Nino going away soon.

Swordfish landing are expected to be strong with the full moon cycle as usual.

Mahi-mahi production has arrived and is as strong as ever! Did I mention we have tons of fresh AAA Mahi HG and fillets daily. The best fresh quality off the boat still in rigor when you get it like all our CR products with seasonally low prices. Our fillet prices are the best value.

Maricultured Spotted Rose Snappers are still continuing to grow in popularity. Whole, Fillet and Butterfiled Fillets are available with a very long shelf life and perfect texture and flavor. Traceable with our CT Tag and Sustainable!

 

Mexico

We are proud to be a partner with CeDePesca and many other stakeholders and participants in the Mexican Grouper/Snapper Fishery Improvement Project(FIP). A portion of our sales from this fishery will go back to the fishery via the FIP to help support sustainability. Black and Red Grouper productiuon is expected to increase and remain steady. 

Red Snapper volumnes have and should continue to increase this month as well.

Of course, The closer to the Holidays we get the more we expect to see higher prices as supply will begin to tighten when most boats everywhere in Latin come ashore to celebrate.

 

Ecuador/Panama

As a chef some of the best shrimp I have ever eatin was in Ecuador at a little beachfront shack.

Panama was a very very close second. Amazing quality and freshness out of both places!! We support only the best!!

We look to support LPN - Labour Rights Promotion Network (Real Life Heroes) an organization that works with governments in SE Asia to bring about positive change in the industry and even risks their lives to find and free slaves from fishing boats and then houses, feeds, counsels and educates not only people who have been kidnapped and enslaved on boats(some for more than 18 years, since they where kids) but also children, women and families. They do so much good and all donations go directly to help the people in most need.
