Chefs Trading's Market Report for January, 2019. Read on for information on what is expected in Costa Rica, Mexico, FIPs, Social Responsibility as well as Ecuador and our other initiatives.


Costa Rica

The Yellowfin Tuna and Swordfish Fishery Improvement Project in Costa Rica is alligned with the United Nations Developement Project and the National Platform in Costa Rica and is now known publicly as the Costa Rica Large Pelagic Longline FIP. The New Year brings a rise in pricing as supply drops off because ALL the fishermen come in for the new year celebrations with family and friends, So almost Nobody is fishing. I'm sure you can see how no supply and steady to rising demand will increase prices on what if any fish is coming in for the first week of the year.

Look for Tuna and Swordfish to be back in good supply with dropping prices mid to late January.

Mahi-mahi production should be steady this month. We expect to still see good landings for some of the worlds best quality especially through us as we ship from the docks in country direct to your local international airport or to your door.
 
Maricultured Spotted Rose Snappers are still continuing to grow in popularity. Whole, Fillet and Butterfiled Fillets are available with a very long shelf life and perfect texture and flavor.

All products as usual are Traceable with our CT Tag which shows our supply chain distributors and the end consumer among other things where and how the product was caught as well as who caught it to ensure traceability that the product is caught legally and is associated with either sustainable methods or is helping the fishery move toward more sustainable practices via a Fishery Improvement Project (FIP)!!

 

Mexico

We are proud to be a partner with CeDePesca and many other stakeholders and participants in the Mexican Grouper/Snapper Fishery Improvement Project(FIP). A portion of our sales from this fishery will go back to the fishery via the FIP to help support sustainability. January is typically Snapper month, so American Reds, B-liners and Mangrove Snappers should be in high quality and lower pricing.

Robalo/Snook should be coming in for the first part of the year.

Hold tight for Groupers, production looks to be steady but lower than normal.

 

Ecuador/Panama

As a chef some of the best shrimp I have ever eatin was in Ecuador at a little beachfront shack.

Panama was a very very close second. Amazing quality and freshness out of both places!! We support only the best!!

In 2019, We look to support LPN - Labour Rights Promotion Network, an organization that works with governments in SE Asia to bring about positive change in the industry and even risks their lives to find and free slaves from fishing boats and then houses, feeds, counsels and educates not only people who have been kidnapped and enslaved on boats but also children, women and families. They do so much good and all donations go directly to help the people in most need.
